Instructions
- Prepare the ice cream base:
- In a large bowl, whisk together the cold heavy cream, cold whole milk, sugar, vanilla extract, and salt until the sugar is dissolved.
- Cover the bowl with plastic wrap and chill the mixture in the refrigerator for at least one hour or, ideally, overnight, according to The Spruce Eats.
- Prepare the ice cream maker:
- Ensure the freezer bowl of your ice cream maker has been frozen solid for at least 12 hours, says lmld.org.
- Place the ice cream canister into the Rival Ice Cream Maker bucket, ensuring it's centered and fits the indentation at the bottom.
- Secure the motor drive onto the canister cover.
- Churn the ice cream:
- Pour the chilled ice cream base into the prepared ice cream maker canister. Fill it no more than three-quarters full, allowing for expansion during freezing.
- Plug in the Rival Ice Cream Maker.
- While it's running, begin layering crushed ice and rock salt around the canister in the bucket. Start with a 2-inch layer of crushed ice at the bottom, then sprinkle ΒΌ cup of rock salt over it.
- Continue layering ice and salt until the ice reaches the top of the rotating canister.
- The ice cream maker will churn for approximately 20-40 minutes. You'll know it's ready when the motor starts to slow down and eventually stops, according to a YouTube video.
- Add the cookies:
- During the last 5-10 minutes of churning, add the coarsely crushed chocolate sandwich cookies to the ice cream maker through the opening.
- Let the ice cream churn for a few more minutes to ensure the cookies are well incorporated.
- Freeze and harden:
- Unplug the ice cream maker and remove the motor drive.
- Carefully wipe away any ice and salt from the top of the canister before removing the lid.
- Remove the dasher and scrape off any ice cream with a spatula.
- Pack the soft ice cream down into the canister. For a harder, scoopable consistency, transfer it to a freezer-safe container with an airtight lid or cover the canister with plastic wrap.
- Place the ice cream in the freezer for at least 2-3 hours or until firmly set. For best results, freeze overnight.
