Ingredients
- 1 tsp oil
- 1 diced onion
- 1 1/2 cups broccoli chopped
- 1 1/2 cups spinach chopped
- salt and pepper to taste (pinch of each)
- 1 tsp chili powder
- 2 cups chicken
- 15 oz enchilada sauce
- 15 oz Greek yogurt
- cover with cheese
- (optional) avocados
- (optional) jalapeno peppers
Instructions
- Preheat oven to 400 degrees
- Saute oil, onion, broccoli, spinach salt, pepper, chili powder, and chicken together
- put in 9x13 pan
- cover with cheese and put in oven for 15 minutes
- (optional) decorate top with avocados and jalapeno peppers
