Ingredients
- 1 1/2 lbs chicken (about 3 Costco chicken breasts)
- 1/3 cup soy sauce
- 1/3 cup water
- 1/4 cup hoisin sauce
- 1 tablespoon rice vinegar
- 1 tablespoon minced garlic
- 2 tablespoons brown sugar
- 2 tablespoons honey
- 1/2 teaspoon chili powder - more if you want it spicier
- 1 tablespoon corn starch
- 1 red bell pepper, chopped
- 1 sliced zucchini
- 1/2 cup peanuts
Instructions
- Cut chicken into 1 inch squares and place in crockpot.
- Add soy sauce, water, hoisin sauce, rice vinegar, minced garlic, brown sugar, honey, chili powder and mix together.
- Cook on high for 2 hours.
- While sauce is cooking, start rice cooking in rice cooker.
- After 2 hours, take 1/2 cup of the moisture from the crockpot, and mix with corn starch - add back into crockpot.
- Add red bell pepper, zucchini and peanuts and stir all together.
- Cook on high for 30 minutes.
- Serve and enjoy.
