Kung-Pao Chicken

Ingredients

  • 1 1/2 lbs chicken (about 3 Costco chicken breasts)
  • 1/3 cup soy sauce
  • 1/3 cup water
  • 1/4 cup hoisin sauce
  • 1 tablespoon rice vinegar
  • 1 tablespoon minced garlic
  • 2 tablespoons brown sugar
  • 2 tablespoons honey
  • 1/2 teaspoon chili powder - more if you want it spicier
  • 1 tablespoon corn starch
  • 1 red bell pepper, chopped
  • 1 sliced zucchini
  • 1/2 cup peanuts

Instructions

  1. Cut chicken into 1 inch squares and place in crockpot.
  2. Add soy sauce, water, hoisin sauce, rice vinegar, minced garlic, brown sugar, honey, chili powder and mix together.
  3. Cook on high for 2 hours.
  4. While sauce is cooking, start rice cooking in rice cooker.
  5. After 2 hours, take 1/2 cup of the moisture from the crockpot, and mix with corn starch - add back into crockpot.
  6. Add red bell pepper, zucchini and peanuts and stir all together.
  7. Cook on high for 30 minutes.
  8. Serve and enjoy.
