Ingredients
- 1 jar sundried tomatoes
- 1 onion chopped
- 4 shallots thinly sliced
- 2 lemons, zested and juiced
- 1 T salt
- Pepper to taste
- one tube (or small can) of tomato paste
- 1 lb Italian sausage
- 1 t red pepper flakes
- 2 C spinach
- 1 C white wine
- 32 oz chicken broth
- 40 oz tortellini (Can use ravioli)
- 1/2-1 C whipping cream
- 1 C parmesan cheese
Instructions
- In large pot on medium heat cook the oil from the tomatoes, onion, shallots, sliced tomatoes, lemon zest and juice.
- Add the tomato paste and sausage
- Cook for 15 minutes
- Add spinach, seasoning and turn up the heat
- Pour in wine and cook 10 minutes
- add broth and parm cheese. Simmer and then add the cream
- Cook the tortellini separately according to package directions
- Put tortellini in the soup when ready to serve
