Tortellini Soup

Ingredients

  • 1 jar sundried tomatoes
  • 1 onion chopped
  • 4 shallots thinly sliced
  • 2 lemons, zested and juiced
  • 1 T salt
  • Pepper to taste
  • one tube (or small can) of tomato paste
  • 1 lb Italian sausage
  • 1 t red pepper flakes
  • 2 C spinach
  • 1 C white wine
  • 32 oz chicken broth
  • 40 oz tortellini (Can use ravioli)
  • 1/2-1 C whipping cream
  • 1 C parmesan cheese

Instructions

  1. In large pot on medium heat cook the oil from the tomatoes, onion, shallots, sliced tomatoes, lemon zest and juice.
  2. Add the tomato paste and sausage
  3. Cook for 15 minutes
  4. Add spinach, seasoning and turn up the heat
  5. Pour in wine and cook 10 minutes
  6. add broth and parm cheese. Simmer and then add the cream
  7. Cook the tortellini separately according to package directions
  8. Put tortellini in the soup when ready to serve
