Ingredients
- 3 lbs boneless, skinless chicken thighs
- 1 tsp cayenne pepper
- 1 tsp chili powder
- 1 tsp salt
- 1 tsp onion powder
- 0.5 tsp garlic powder
- 2 Tbsp avocado oil
- 0 favorite taco toppings (red onion, avocado, tomatoes, salsa verde, paleo ranch)
- 0 gluten free tortillas
Instructions
- Cut up your chicken thighs into smaller pieces.
- Gather your seasonings
- Add the seasonings to your chicken. Give it a good toss with your hands to get the pieces evenly coated.
- Add the Avocado Oil to a large skillet and bring it up to heat. If you don’t have Avocado Oil, any preferred, natural oil will do. I simply enjoy using Avocado Oil in this dish because a) it’s a little lighter than olive oil, but not as sweet as coconut, and b) it’s already a flavor found within the dish, so it’s not at all distracting.
- Add your chicken to the hot oil and let cook through. Depending on the size of your pieces, it should take about 8-12 minutes.
- While your chicken cooks, prepare the toppings. I like to dice the red onion, tomatoes, and avocado. Then the sauces, I can happily drizzle on top!
- I highly recommend warming up your tortillas just before plating. It can be as simple as popping them in the microwave for 20-30 seconds, but you can also warm them over the stove or in the oven.
- Plate and enjoy!
