Quinoa Salad

Ingredients

  • 2 C water or chicken broth
  • 1 C uncooked quinoa
  • 0.5 C crumbled feta cheese
  • 0.5 C chopped pecans
  • 0.5 C chopped green onions
  • 0.5 C dried cranberries
  • 0 zest of 1 orange
  • 0 ===Citrus Dressing===
  • 0.25 C freshly sqeezed orange juice
  • 2 T olive or canola oil
  • 1 clove garlic, minced
  • 0.5 T kosher salt
  • 10 cracks black pepper
  • 2 T creole or other mild coarse-grained mustard

Instructions

  1. Bring water or chicken broth to a boil in a medium saucepan. Add quinoa and cover with a tight-fitting lid. Reduce heat to simmer and cook 20 minutes. Remove from heat, allow to stand 5 minutes and then fluff with a fork. Chill.
  2. Toss chilled quinoa, cheese, pecans, onions, cranberries, and orange zest together. Drizzle citrus dressing over the mixture and then toss quickly to combine. Serve cold.
