Ingredients
- 2 C water or chicken broth
- 1 C uncooked quinoa
- 0.5 C crumbled feta cheese
- 0.5 C chopped pecans
- 0.5 C chopped green onions
- 0.5 C dried cranberries
- 0 zest of 1 orange
- 0 ===Citrus Dressing===
- 0.25 C freshly sqeezed orange juice
- 2 T olive or canola oil
- 1 clove garlic, minced
- 0.5 T kosher salt
- 10 cracks black pepper
- 2 T creole or other mild coarse-grained mustard
Instructions
- Bring water or chicken broth to a boil in a medium saucepan. Add quinoa and cover with a tight-fitting lid. Reduce heat to simmer and cook 20 minutes. Remove from heat, allow to stand 5 minutes and then fluff with a fork. Chill.
- Toss chilled quinoa, cheese, pecans, onions, cranberries, and orange zest together. Drizzle citrus dressing over the mixture and then toss quickly to combine. Serve cold.
